Hummus is a great plant-based protein, high in vitamins and minerals. It supports bone and heart health, helps with digestion, decreases inflammation and fights illness and disease. What's not to love about hummus!
I know you can easily pick it up at the grocery deli, but it's worth the time to pick up a few extra ingredients and make it from scratch. The natural and fresh taste is well worth it!
Ingredients:
1 can (15oz) garbanzo (chickpeas), drained (save the water and try to use BPA free cans).
2 cloves garlic, peeled
3 tablespoons tahini
3 tablespoons olive oil
1/2 teaspoon salt
1-2 tablespoons fresh lemon juice
1/4th cup water (from the garbanzo beans saved water or fresh filtered water).
1/4th cup fresh, chopped Italian parsley (optional but gives it a fresh flavor).
Other optional ingredients: sun-dried tomatoes, fresh chopped basil, kalamata olives, roasted red pepper.
Directions:
Put all ingredients in blender or food processor and blend until creamy. Refrigerate until ready to use. Serve with pita bread, crackers or vegetables as a dip. Also, great on sandwiches!
