Quinoa Super Food bowls are an awesome way to pack your meal with healthful veggies, grains, lean protein and good fats. The only rule is that you combine your favorites! There really is no need for a recipe, but I am leaving you with one as a guide. Don't be afraid to find your inner creativity by coming up with your own Super Food Bowls!
I will make a batch of quinoa and keep it in my fridge along with other healthful ingredients so you can just throw it together for an easy, healthy snack or meal. I eat these things for breakfast!
Ok, here is a recipe, but do what you want! You can't make a mistake:)
Ingredients (approximately 4 servings)
4 cups baby spinach
1.5 cups cooked quinoa
1 cup chicken breast
1.5 cups tomatoes, chopped
1 avocado, sliced
Other optional ingredients
1/2 cup walnuts
2 Tablespoons red onion, minced
1 egg, poached or fried
Layer ingredients and top with your favorite dressing. Keep it simple with balsamic and olive oil or try the recipe below:
Dressing
4 tablespoons olive oil
2 teaspoons honey
1/2 teaspoon dijon mustard
Salt and ground pepper to taste
