Easy Broccoli Soup

I love making soups and am often willing to make recipes with a long list of ingredients, but there are days I need to whip something up quickly without compromising too much taste. This recipe has an amazing amount of flavor, considering its minimal ingredients. I feel great when I have a big bowl of antioxidants sitting front and center of my fridge for my family to heat up whenever they like!

Ingredients

  • 2 lbs broccoli crowns (I used 2 bundles, totally 4 crowns)

  • 1/2 cup minced onion (I went a little heavier on these)

  • 4 cups water

  • 2 tsp salt

  • Juice from half lemon

  • Salt and pepper to taste

  • See optional garnishes below

Directions

  • In a large pot simmer Broccoli and onion in salted water until tender. Don't overcook! Broccoli should maintain vibrant color.

  • Transfer to a blender and puree in batches until soup has a smooth consistency.

  • Season to taste with salt, pepper and a squeeze of lemon.

  • Transfer to pot and heat before serving.

  • See garnish options below

Optional

Garnish with:

  • 3 to 4 oz. smoked trout fillet, flaked

  • 1/4th cup chopped fresh chives

  • Freshly grated Parmesan

  • Or forget all that and simply swirl with a little olive oil
