Energy Balls

Writer's picture: Susan JensenSusan Jensen

This is the best tasting and satiating little snack! Triple or quadruple the batch and keep them on hand for those busy days you are running out the door and need a little protein mixed with some good fat and carbs. You will feel like you are eating dessert!

Four Ingredient Energy Balls

Mix together:

1 3/4 cups plain oats (old fashioned or quick cooking)

3/4 cup natural peanut butter or almond butter (warm it up a little if it's not creamy)

1/3 cup honey

1/3 cup dark chocolate chips (mini or regular)

Optional: 1/4 cup wheat bran, hemp seeds, flax seeds or chia seeds

Modify texture and flavor by adding more honey or peanut butter to your liking:) Put them in the fridge if you want to firm them up a bit.

You can refrigerate for up to 3 weeks or freeze for up to 6 months!
